Legend has it that Zhang Zhongjing, a renowned physician from Henan, worried deeply about his impoverished fellow villagers. On the winter solstice, he set up a makeshift medical clinic in an open space near the eastern gate of Nanyang and began distributing “Quhan Jiaoe Tang”—a soup designed to ward off the cold—to the poor. The “Jiaoe” referred to what we now know as dumplings. After consuming this soup, people felt warmth spreading throughout their bodies and their ears grew warm and flushed. Thus, the custom of eating dumplings on the winter solstice came into being.
